About Us
Our client, Pun’s Food （犇之食堂）, is hiring Sous Chef 副廚師(Taiwan Cuisine台灣菜).
Key Responsibilities 主要功能
- Execute assigned kitchen operational 負責廚房有關營運作；
- Support executive chef to run the kitchen’s daily operations including but not limited to food preparations, food and material purchase and management, monitoring budget, providing staff training, house-keeping and administration支持行政總廚管理廚房的整體日常運作，包括但不限於食品準備，食材採購，員工培訓，管理，監察開支，廚房整潔及相關行政工作;
- Act as Executive Chef during the absence of Executive chef 當行政總廚缺席時負責行政總廚的工作；
- Ensure and maintain working environment meeting industrial hygiene standards 確保維持工作環境符合飲食業的衛生要求；
- Manage and train up assigned staffs to ensure food production excellence for food production and continuous product enrichment 管理以及培訓下屬員工在追求卓越食品質素和不斷豐富產品品種的同時能適時滿足運作/業務發展的需求;
Qualifications and Experiences 資歷
- At least 12 years' experience in kitchen operation with 5 years experiences in managing a team in in reputable restaurants/hotel/membership clubs 最少十二年廚房工作經驗，其中五年在有名酒家/酒店/會所負責管理工作;
- Sound knowledge on Taiwanese cuisine especially traditional Taiwanese Dishes 有良好的台菜知識特別是傳統台菜
- Ability in menu design and planning for different events，occasions or festivals to meet business and marketing requirements能够設計規劃菜單應對不同場合，時節以便滿足業務和市場的需求；
- Strong leadership and has proven records in team management良好的領導能力並擁有成功管理團隊的經驗;
- Formal cooking training; Good understanding of HACCP system; Having formal HACCP training is preferred but not necessary 具有正式的廚藝訓練；擁有HACCP的良好知識; 最好但不一定具有HACCP的認可資歷;
- Creative, excellent interpersonal skills, cheerful, and can work under pressures 有創造性，優良的人際技巧，個性開朗，和有抗壓力能.
