- Directly responsible for all Restaurants and Beverage areas, ensuring a smooth running, profitable operation within the framework of the Hotel.
Responsible to maintain the overall welfare of our Associates by providing them with the training and resources to take are of our guests.
Develop & enforce standards, policies & procedures in the restaurants & beverage areas.
Achieve departmental budget goals by maintaining efficient cost expenditure.
To ensure that Managers are responsible for the department Profit & Loss Statement.
Preparation of the yearly department Budget by using history & forecasting techniques to develop an aggressive budget that reflects the outlets achievable capabilities.
To ensure that the departments are accurately forecast business demands on a weekly basis to ensure efficient staffing & food production.
To ensure the efficient scheduling of management and associates.
Supervise completion & critique of age progress report on a weekly basis.
To develop & execute plans/actions for the marketing of restaurant outlet offerings.
To develop and implement Managers, Supervisor training plans on a quarterly basis in conjunction with HRD.
To support the departmental daily “15-minutes” training program.
To be responsible for the execution of Restaurant Management review and appraisals in a professional and timely manner.
To supervise all aspects of Associate manager including hiring and discipline in conjunction with the Director of F&B.
To train subordinate managers and supervisors in effective “coaching & counselling” and the correct process of progressive discipline.
To ensure that department conduct an effective monthly Associate meeting with minutes and P&A forwarded to the GM, F&B and HRD.
To practice “open door” policy to all Associates.
Ensure that all Managers and Associates follow all job safety regulations and that all hazards are reported to Loss Prevention & Engineering.
Ensure that departments are responsible for asset management of outlet property & facilities.
To ensure that departments conduct a maintenance inspection on a monthly basis.
Promote positive inter-department relations through candid communication & cooperation.
To respond to guest inquiries or concerns within 24 hours in the appropriate manner.
- Strong leadership and motivational skills
- Excellent interpersonal and communication skills
- Minimum 4-5 years of relevant experience in similar catering establishments
- Good command of both spoken and written English
